100 lb Ham, 3 oz Salt peter, 1 pt Salt, kosher, 1/2 lb Brown sugar, 2 pt Salt, 1/8 lb Pepper
The “recipe” indicates ham from corn-fed hogs, and “fine salt (best quality)”. Since kosher salt is normally available today in the market place and contains no prescribed dosage of iodine (I), the ingredients have been changes to specify it. Firstly mix carefully the salt peter, one pint salt and brown sugar and rub over the hams and let stand for one complete day. Then rub the meat with the black pepper and part of the remaining salt. Let stand for five days untouched and then rub meat again with fine salt. Set aside for one month, hang the meat up and brush off the salt. Have hams smoked at a good smoke house, smoking them for ten days with wood. When finished, you must know how to cure hams by rubbing complete ham with red pepper, wrap circumspectly in brown paper and then in muslin bags and hang up with the hock down. Hams ready in this manner will keep for an indefinite period, and flavor and eminence improve with time.
